Ingredients:
Potatoes - 3 big size
Green peas - 1/2 cup
Onion - 2 medium size (Finely chopped)
Garlic paste - 1 tbsp
Capsicum - 1/2 cup
Tomatoes - 1 cup
Kashmiri red chilli powder - 2 tbsp
Turmeric powder - 1/2 tsp
Salt - as per taste
Bhaji pav masala - 2 tbsp
Coriander powder - 1/2 tsp
Kasuri methi - 1/2 tsp
Green coriander - finely chopped
Lemon juice - 1 tbsp
Oil - 1 tbsp
Butter - 3 tbsp
Water - as per requirement
Step by step Procedure
Preparation time: 30 minutes
1. Take 3 big sized roughly chopped potatoes in pressure cooker. Add 1/2 cup green peas, little salt and 1 cup water in it.
2. Boil potatoes and green peas upto 4 whistle.
3. As the pressure is released, transfer the boiled potatoes and green peas in a bowl.
4. Take a pan and add 1 tbsp oil and 2 tbsp of butter in it.
5. As butter melted, add 2 finely chopped onion. Let the onion fry till it turns golden brown and soft.
6. Add 1 tbsp garlic paste and saute it.
7. Add 1/2 cup finely chopped capsicum and 1 cup finely chopped tomatoes.
8. Add little salt so that tomatoes get soft quickly. Let fry all the ingredients very well for 2 to 3 minutes.
9. Add 2 tbsp Kashmiri red chilli powder, 1/2 tsp turmeric powder, salt to taste, 2 tbsp bhaji pav masala and 1/2 tsp coriander powder and mix all the spices well.
10. Add boiled potatoes and green peas in it.
11. Mash everything well by using potato masher. Cook bhaji at medium flame.
12. Add water as per the requirement to set the consistency of bhaji.
13. Add little kasuri methi, finely chopped green coriander and 1 tbsp lemon juice and mix well.
14. Bhaji is ready. Turn off the flame of gas.
15. To roast the pav, take non stick tawa and add butter in it,
16. As butter is melted, add chopped coriander and roast the pav both the side.
17. Before serving bhaji, set the consistency of bhaji by adding water if required. Because as bhaji is cooled down, it thickens.
18. Serve the bhaji pav in a plate with chopped onion and lemon.
19. Garnish with green coriander and little butter.
